is a fruit paste traditionally from Spain. Quince is a seasonal
fruit available during the fall months. Quince is pale yellow
& green in color and incredibly versatile. Chameleon like,
Quince changes from a yellow pulp when cooked using lemon
juice and sugar to a deep amber colored paste used as a cheese
accompaniment.
